I try to incorporate as much raw food into my diet as possible. Raw food is packed with numerous vitamins and enzymes which are lost during the cooking process. Heating kills and inactivates the majority of these elements, therefore eating raw foods is important to providing your body with essential nutrients.
Get your dose of raw veggies with this delicious and creative chilled soup. It’s super simple, quick, and easy to make – just prep the veggies and throw them in a blender! This green soup is creamy, refreshing, and full of flavour. It’s a perfect appetizer on a summer day served in bowls for dinner or in large shot glasses for a party. This recipe is truly one to try, especially since it’s so quick to make and stays really well in the fridge for 4-5 days.
