Today I’m sharing with you a delicious, healthy snack you’ll love to munch on during some ‘you’ time.
I love raw energy bites. My ultimate favourite are my brownie bites, and I’ve been enjoying experimenting with different combinations. These bites are full of apple cinnamon goodness. They are a great snack or I’ve been having a few (or more) for breakfast. They store great in the fridge or freezer and are perfect for on-the-go.
- 2 cups rolled oats
- 1 tbsp chia seeds
- 1 tbsp hemp hearts
- 2 tsp cinnamon
- ¼ tsp nutmeg
- ½ cup almond butter
- 4 medjool dates
- 1 apple, cored and finely diced
- Add dry ingredients to a food processor & pulse a few times until combined.
- Add almond butter, medjool dates & diced apple. Process until fully combined & batter is sticky.
- Slightly wet your hands & use a teaspoon to scoop out a small amount of batter into your hands. Roll into 1-1.5 inch balls. Store in an airtight container in the fridge or freeze for 2-3 weeks, thawing before eating. I sometimes pop a few balls in the microwave for a few seconds to eat them slightly warm.
