Spring is in the air! It’s been slowly warming up in the GTA (although overnight temperatures are still cold), the sun has been showing itself more and more each day, and the morning air is fresh and crisp. For me, spring is a time for reflection and regeneration after the winter blues (which I sadly experience). I am a huge fan of spring cleaning – both material and non-material items, such as your thoughts! In the next couple weeks, I will be tackling a huge material spring clean in preparation for a big move. I would like to share some BIG news that I have not previously mentioned on my blog……
I AM MOVING TO CALGARY!!
This cross-country relocation has been in the works for over half a year now, and I am so thankful, happy, and excited that it is working out and the time is very near for the actual move! The reason for my move is graduate studies. I will be starting my Masters of Science next month, and I cannot be more ecstatic! I have visited Calgary twice before and although my heart will always be in Toronto, I have a feeling I may fall hard for the city.
After sharing some big news in my life, I’d like to introduce today’s recipe. I have to give credit to this colourful salad to my mom. During my freshman years of undergrad, I was so swamped with schoolwork that my mom packed my school lunches/dinners (she spoiled me!). Most weeks I wouldn’t come home after school and crashed at my brother’s place that was much closer to my university, so my mom packed me multiple meals. This salad was recurring in many of those meals because it is absolutely delicious, nutritious, and stays very well in the fridge for days. It’s a perfect side salad for fish, which is how I like to enjoy it!
- 1 can red kidney beans
- 1 can whole kernel corn
- 1 bell pepper, diced
- ½ red onion, diced
- ½ bunch cilantro, finely chopped
- 1 lemon, juiced
- 1 lime, juiced
- salt & pepper, to taste
- Drain, rinse & strain the cans of red kidney beans & corn.
- Place all ingredients in a large bowl, season with salt & pepper to your liking & toss. Serve chilled & enjoy!
