Happy New Year to all!
I am at a disbelief at how fast this month is flying by. I’ve had quite a busy end of December, wrapping things up with school, and flying back home to Toronto for the holidays. When I returned, I jumped back into the swing of school and celebrated my 25th birthday last weekend. I honestly can’t believe I’m 25 – I know it’s just a number, and I feel amazingly healthy, but I remember turning 21 like it was yesterday. Some older people in my life tell me the time seems to pass faster the older you get. I’m scared that they might be right!
Life has been treating me quite well in 2016. I love keeping busy and surrounding myself with amazing people that contribute positively to my well-being. I’m in a really great place right now, and I want to stay on this happiness high as long as I can. 🙂
Today I’m sharing with you a super simple recipe that I love to snack on from time to time. I really love tuna and snacking, and this is my to-go way of preparing a delicious tuna salad. Give it a try – I guarantee your taste buds will agree!
- 1 can chunky tuna
- 1 pickle, diced small
- ¼ cup onion (red or white, your choice), diced
- 2 tbsp light mayo
- 1 tbsp dijon mustard
- salt & pepper, to taste
- Drain the can of tuna and flake with a fork into a bowl.
- Combine tuna with all ingredients. Serve with crackers of your choice (I use Mary's crackers which are gluten-free). Enjoy!
